The H1 / H2 / Header family, in my view is in the face card level. They are important but vastly LESS important than the TITLE tag and somewhat MORE important than the B / I / EM tags. I do recommend using them if at all possible, as they are in the Google SEO document and seem to correlate strongly with good SEO performance.
Some people disagree, but my feeling is that using the HEADER tag family definitely does NOT hurt and CAN help, so why not?
As for competitors, anyone can 'reverse engineer' the keywords being displayed on a webpage, as anyone who knows SEO knows that the TITLE for example is critical, as are the H1 / H2, A HREF, ALT etc., so it's very very simple to look at a page and understand the on page signals it is sending Google.
Even reverse engineering links is pretty easy. So you can't really hide, so don't bother to try.
